Enchiladas Rancheras - 2 Tbs Nuevo Progreso Enchilada Sauce Seasoning, 4 Nuevo Progreso Flour Tortillas or 6 Nuevo Progreso White Corn Tortillas, 2 Tbs of Vegetable oil, 1 cup of water or (better chicken bullion), 400g of Carnitas (recipe found on Nuevo Progreso Taco Seasoning), 200g of shredded cheese, 200ml of Salsa Verde, 150g Sour Cream Preparation: First begin by heating oil in a pan or pot. Add Enchilada Seasoning and gently stir and fry for 2 minutes making sure not to burn the mixture. Then add water or bullion and let cook for an additional 5 minutes. Mix 100g of cheese and carnitas together and divide between the tortillas. Roll tortillas tightly with mixture inside. Pour a few spoonfuls of Enchilada sauce on a plate and place rolled tortillas on the sauce. Now pour remaining sauce over the rolled tortillas and top with the rest of the cheese and warm in the microwave until cheese is melted on top. Pour salsa verde over half and serve with sour cream. |
